Life on a farm
At Fattoria del Colle there are 4 ancient bread baking oven, three of which still functional. They are enormous and only the presence of large patriarchal families explains the necessity of cooking surfaces so large.
24 people once lived in the Archi villa (7 bedrooms, 5 bathrooms, kitchen, large dining area and private swimming pool) ; probably every couple had a room to divide with their children while on the ground floor they had the stables and the barn. To bake the bread for one week for such a community there really was a need for a giant sized oven..
In the Colle villa courtyard the oven is now enclosed in the children’s room. Once here there was also a “buratto”, which is a two-meter long kneading
trough with a sieve incorporated in the lower part to separate the flour from the bran. Today the “buratto” is in the Toscana Lovers shop in Siena amidst the objects of excellent Tuscan handicraft.
The wood-fired brick ovens at Fattoria del Colle are lit only rarely but are still able to prepare exceptional roasts and mostly give tastes and aromas that are unique because of the essences
in the wood of our woods.
